GRANDMA'S ZESTY CRANBERRY AND APPLE CAKE

- Electric mixer and large ( 10 inch +) baking glass pie plate
- 12 ounces fresh cranberries
- 1 Granny Smith apple peeled cored an diced
- 1/2 cup light brown sugar
- Zest from one orange ( about 1 tablespoon )
- 1/4 cup from freshly squeezed orange juice ( about 1 orange)
- 1 1/2 teaspoons of ground cinnamon
- 2 Extra-large organic eggs ( At room temeperature)
- 1 cup of granulated sugar
- 1 stick of salted butter melted
- 1 Teaspoon of pure vanilla extract
- 1/4 cup sour cream
- 1 cup all-purpose flour
- Preheat oven at 325 F
- In a rectagular glass pie plate add the ingredients: fresh cranberries, diced apple, brown sugar,orange zest, orange juice and 1 teaspoon of cinnamon. Set aside for 20 min.
- BATTER: Use an eletrical beater and a deep bowl: beat the eggs for 3 minutes, add 1 cup of granulated sugar, the butter, vanilla and sour cream for another 3 minutes or until combined. Slowly add the flour and continue mixing at low speed.
- Put the batter slowly over the fruit mixture until completely covered. Do not allow any fruit to surface.
- Combine 1/2 teaspoon of cinnamon with 1 tablespoon of sugar and sprinkle the mixture over the batter.
- Bake for 60 min at 325F , test with knife and when knife comes out clean iand the fruit is bubbling around the edges, take out of oven and cool.
Serve at room temperature or slightly warm with a spoon of vanilla ice cream.
